FRIED SAGE LEAVES

INGREDIENTS:
-20 large sage leaves
-150 gr flour
-About 1/2 of cold water
-1/2 teaspoon of baking soda
-extra virgin olive oil
-Salt to taste

 

METHOD:

Wash and dry the sage leaves.

With the whisk, in the bowl, prepare a very soft batter with flour, water and bicarbonate.

Heat the oil in the pan, (be careful not to allow the temperature to rise too high).

Pass the leaves in the batter and then in the boiling oil.

Turn the leaves to cook them on both sides until they become slightly golden and crisp; pass on the straw or absorbent paper to let the excess oil flow.

Sprinkle with salt and serve immediately.
